National Donut Day falls on the first Friday of June each year, and it signifies a special bite of history. It was established in 1938 by the Salvation Army in Chicago to raise funds for the war effort. In commemoration of the 75th anniversary of D-Day, try this adapted baked donut recipe. Ditch the deep fryer and the messy clean-up and sink your teeth into a healthy ring of tastiness. That is, until you add the toppings! Great for dunking in your morning coffee, handing off to the kids as an afternoon snack, or serving up for a ladies’ luncheon or teatime. Topping suggestions include powdered sugar or cinnamon, strawberry or chocolate glaze, maple syrup, or ready to eat icing with sprinkles. You will need the oven and a donut pan.

- 1-1/3 cup All Purpose Flour
- 2 teaspoons Baking powder
- Salt as needed
- 1-1/2 tablespoon Curd (Dahi / Yogurt)
- 1/2 cup Sugar
- 3/4 cup Milk
- 2-1/2 tablespoon Cooking oil
- 2 teaspoons Vanilla Extract
- Preheat the oven to 350 degrees and grease the donut pan.
- In a small bowl, mix together flour, baking powder and salt. Set it aside.
- In a medium bowl, whisk together yogurt and sugar. Once done, add milk, oil, and vanilla essence. Mix until everything is combined well. Gently stir in the flour mixture, whisking until there are no lumps.
- Fill each donut impression in the pan with batter (3/4 full), leaving space at top for rise. Bake for 15-20 minutes or until a toothpick inserted in the donut comes out clean. Place donuts on a cooling rack and cool it completely.
- Dust with powdered sugar, drizzle with maple syrup, glaze with chocolate, butterscotch or strawberry syrup, or spread on pre-mixed icing and add sprinkles.
